Blueberry Upside Down Cake

Blueberry Upside Down CakeIngredients:

  • 1/4 cup melted butter
  • 1/2 cup brown sugar
  • 2 cups blueberries
  • 1 tablespoon lemon juice

Cake

  • 1/2 cup butter
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 3/4 cup milk

Directions:

  1. Combine melted butter and brown sugar in a 9 inch square cake.
  2. Spread blueberries evenly over top. Sprinkle with lemon juice.

Cake

  1. Cream butter; gradually add sugar.
  2. Beat in egg and vanilla.
  3. Sift flour, baking powder, salt and cinnamon.
  4. Add dry ingredients alternately with milk to creamed mixture.
  5. Spread batter over blueberries.
  6. Bake at 350°F for 45 to 50 minutes.
  7. Let cool 10 minutes in pan, then turn out on to large flat plate.
  8. Served warm with ice cream or whipped cream or at room temperature.
